Sherriff is not a unique role, so yes there could be multiple, but considering the case against Mori its highly unlikely he is telling the truth.

According to the Psychic wiki page "On odd nights you will have a vision of three players, at least one will be Evil". It doesn't say anything about it only being one.

I dont think so. While Swanty's role was neutral evil (necro), idk if that means that mafia would show up as evil, or if Glims would have got a note saying "one of these people is mafia"
