I am honored to say that the Norfolk Seawolves have drafted me for season 31 of the International Simulation Football League. I could not be more humbled to have been selected second overall, and am looking forward to joining Sconnie McHits on the field. I was so excited, I shared this exciting news with my therapist! I tell everyone.
I have to say that Sconnie's contagious enthusiasm for this league made it so easy to join. He is a leader at heart, and genuinely cares about helping everyone around him succeed. I sincerely appreciate what he has done to pave the way for me, and for all the connections he has made, to make my entry and participation in the league so much easier.
The "Brunch Bet" begins soon, once the regular season begins! I am looking forward to Sconnie in an apron, and I'll make an early prediction that I will have a plate full of cakes!
Thank you to every person who has welcomed me, and made me feel important as I am. I feared being treated as a "third wheel" to Sconnie, because he is so dedicated and simply incredible. I appreciate people allowing me to hold my own space, and for making this league feel like family.
Special considerations go to Negs, for bringing humor, encouragement, and strategy to the Locker Room, in that order. Schwarz, for genuinely caring about each of us Rookies and motivating all of us to meet our potential. To Tesla for being a listening ear, and being someone to turn to for consistent validation. Isa for his excitement for all things food, and for taking the time to scout me. To all of my teammates for your humor and wit. And of course to Sconnie, for being you, for helping me and everyone else, every step of the way, and for bringing the hype. You're all incredible humans.

Sea Salted Caramel
In wanting to continue to create a space for all brunch lovers to come and discuss our love of pancakes and "all the football things", I wanted to celebrate being drafted to the Norfolk Seawolves!
For my pun lovers out there, I hope you can appreciate my pancake choice this week.
You can find another recipe to make these from scratch, but did you know that there are premade sea salted caramel pancake batters out there? If you love fall flavors, now is the time to try this delicious combination. I love to top with caramel syrup, ice cream, whipped topping, and most other sugary flavors. For those of you who like chocolate with your pancakes, adding mini chocolate chips to this batter can be really tasty!
You'll need the following ingredients:
1 cup of Pancake Mix
1 large egg
1 Tbsp of butter or oil
2/3 cup of milk or water
Directions:
HEAT pancake griddle to 350°F (medium heat). Lightly grease griddle.
MIX milk, butter, and egg together in a medium sized bowl. Add batter by lightly spooning it into measuring cup and leveling it off. WHISK pancake mix and the egg mixture. Do not over-mix; it will be thick. Let batter stand 2 minutes.
POUR slightly less than 1/4 cup batter per pancake onto griddle.
COOK 1-1 1/2 minutes per side. For light and fluffy pancakes, FLIP only once, when tops bubble and bottoms are golden brown.
