The Colorado Yeti have had one of the highest profile rebuilds, namely due to the fact that they were the first team to truly require one. The Las Vegas Legion blew up their entire franchise, so they don't quite count. The Yeti, on the other hand, are one of the league's founding franchises, and were the first team to make the championship game, along with the Arizona Outlaws, to whom they would lose that very game.
The Yet started their history with back-to-back 8 - 6 seasons, before completely derailing. Since then, there have been multiple failed attempts to kickstart the struggling franchise. It wasn't until they traded away a number of key pieces - Boss Tweed and Carlito Crush to name two of the more high-profile recent ones - that things really kicked off. Though, to be fair, it wasn't an immediate payoff.
With picks acquired from those trades, among others, and the draft picks earnt through a number of winless seasons, the Yeti were able to bring in players such as Dwayne Aaron, Ryan Applehort, Howard Miller, and Mark Grau, who, along with long-time contributors Haruki Ishigawa, Antonio Sandoval, Andre Bly Jr., Johnathon Saint, and Michael Tillman, have finally started to actually rebuild the team. The results are finally showing, too, as Season 8 saw the Yeti win 6 games - their most since Season 2.
