I don't think the PDs record is as unreachable as it was in DDSPF16, for instance Triplet would be close with a 30 PD/season pace for the next 5-ish seasons (his prime)
And if not him, maybe someone will come around that will earn CB1 playing time from very early in their career and hold it for many seasons after.
Similarly, as you noted the catches record may also be more touchable than I'd hoped when I retired DiMirio (who for the record played one singular game at outside WR), and if not, certainly the catches by WR record which is 880 from Willie will fall. I think I should be able to break Willie's catches record since I'll be WR1 from this year until at least the second season after regression and will get extra games.
