Halftime shows should encourage fan participation, in my opinion. So I'd hold some sort of contest. I've seen lots of takes on this, like at Villa Park they get random fans to take a penalty, and if you get it in the corner, you win a £50 voucher for example. There's plenty of videos on the internet of similar things with making a half court shot during half time of NBA games, or the trampoline dunk thing (which looks incredibly fun). All of these things are pretty popular with fans, so I'd lean into that.
Have a couple skills challenges for fans, like throw a pass into a bucket from 30 yards and win box tickets to the next home game or something like that. Or have people try to run in a touchdown against a mascot. While this is all going on, have someone out in the crowd talking to random fans, get them up on the big screen airing their opinions on the game so far, things like that. Sure it's cool to see a famous musician or some sort of special talent on display, but nothing beats the chance to be a part of it yourself, in my opinion.
