Is there anyway we could default the board sorting order for topics such as in the media section from last post date to topic start date?

Do you mean making it so it sorts by when the topics were posted instead of a thread being bumped when someone comments on it?

If so, I'm not sure how, but no we aren't changing to that. If you meant something else please clarify for me.
